In 1980, New York writer Laurie Colwin visited Texas at the SMU Literary Festival. During her stay there, she ate at a house in Dallas, where she was served creamy spinach with cheese and jalapenos. Enchanted by the food, Colwin asked for a recipe. She later shared this with her readers in her section of Gourmet Magazine.
In 2006, when she started blogging about food, two of Laurie Colwin’s books, Home Cooking and More Home Cooking, contained many of her magazine stories. . .
