The Brownsville Wellness Coalition runs a program called “The Happy Kitchen” or “La Cocina Alegre”, where community members can learn about the importance and benefits of eating healthy foods, with hands-on experience cooking low-quality, low-cost meals from local ingredients.

The interactive six-week series of lessons emphasizes the selection and preparation of fresh seasonal foods that are nutritious, economical and tasty. Courses are held at various locations throughout Brownsville and participants receive printed recipe books in English and Spanish. They will also receive ingredients for recipes learned in the classroom!

This type of community work for a healthier outcome is really what It’s Time Texas is all about. We look for, support and connect organizations that are truly in the field and doing the work. We are proud to share this healthy recipe from La Cocina Alegre with our audience and we hope you enjoy it!
