The 2022 community challenge is in full swing! In the second week, our friends at Brighter Bites shared a delicious, cheap and healthy recipe that you can cook this week. See below how to make your own cauliflower Ceviche, and post your healthy food in the Community Challenge to earn points!

- 1 cauliflower head (about 5 cups sliced)
- 6 Roma tomatoes, finely chopped
- 3 avocados, sliced
- Juice of 4 limes
- ¼ cup sliced red onions
- ½ jalapeño, seeded and diced
- Ku a cup of finely chopped coriander
- 1 teaspoon garlic powder
- 1 ¼ teaspoon salt
- Ičky teaspoons ground black pepper
Cut the cauliflower head into roses. Bring a pot of water to a boil and throw the cauliflower in the water (or put it in a steam basket). Cook for about 5-7 minutes, or until soft. Remove the cauliflower from the pot and place it in an ice water bath for one minute. Remove with a perforated spoon and chop finely. Put the sliced cauliflower in a large mixing bowl. Add tomatoes, avocado, lime juice, red onion, jalapeno, coriander, garlic, salt and black pepper. Put the ceviche in a closed container in the fridge and let it rest to taste. Serve with baked tortilla chips.
